I spent 18 months on the keto diet plan and lost an incredible amount of weight. Thanks to keto, I regained my health and confidence. There are thousands of resources out there, and it’s not for everyone, but these were absolute staples and the reason for my success. In 2025, I’m transitioning to the Mediterranean Diet.

Hands down, this is my go-to meal. I eat it for dinner nearly every night.

Most of my recipes come from Wholesome Yum.

Every. Damn. Day. I wouldn’t be where I am with the keto diet without Keto Chow. I recommend it with butter. So good!

Every single day. Okay, well maybe not every day, but pretty darn close. It’s pretty simple – 6-7 slices of Persian cucumbers halved, 6-7 cherry tomatoes, a generous spoonful of feta, and homemade dijon vinaigrette.

My easy vinaigrette: .5C olive oil, .25C red wine vinegar, 1TB coarse mustard, pinch of each – pepper, salt, onion salt, garlic powder. Mix it up in a dressing container. Lasts about a week.

I love these for a quick snack. I don’t always add chocolate chips, as it’s not always easy to find them without going out of my way. I, personally, use Lankanto granulated sugar instead of powdered as I like the texture & sweetness the best of all the different sugars I’ve tried.
